2 cups dry brown lentils, rinsed
8 cups water
½ onion, chopped
1 small carrot, chopped
2 teaspoons oregano
2 cloves garlic, minced
1 celery stalk, chopped
1 small potato, chopped
2 tablespoons extra virgin olive oil
2 bay leaves
seas salt, to taste (optional)
In a large saucepan or soup pot, combine all ingredients. Bring to a boil Reduce heat, cover, and simmer until lentils are very soft, about 50 to 60 minutes. Makes 6 servings.
Garnish with oregano sprigs.
