Carrot Cake Smoothie DessertThis smoothie is a healthy, nutritious combination of carrots, pineapple, banana and oatmeal for a great breakfast start. Carrot Cake Smoothie is also a unique, tasty dessert for entertaining guests. The carrots offer a good source of the heart-healthy vitamin A which may help prevent heart disease.Recipe Ingredients:¼ cup plain unsweetened almond milk1 frozen banana 1 cup steamed, cooled carrots ½ cup cooked, cooled oatmeal ½ cup frozen pineapple chunks 1 teaspoon ground cinnamon Recipe Instructions:Add ingredients to a blender or food processor and blend until smooth. Serve smoothie dessert in a bowl or cup and top with almonds, sliced bananas or similar. Makes 2 servings.Roasted Vegetables & ChickpeasThe heart-healthy vegetables of carrots, sweet potatoes, onions and chickpeas in this low-fat dish combine together for a flavorful, festive feast.Recipe Ingredients:1 lb. carrots, peeled and cut into 2-inch pieces1 lb. sweet potatoes, peeled and cut into chunks 1 large red onion, peeled, halved, and cut into 1-inch wedges 1 lb. red or russet potatoes, cut into cubes 6 cloves garlic, minced 1 - 16 oz. can chickpeas (garbanzos), rinsed and drained 2-3 tablespoons olive oil 1 teaspoon dried rosemary, crushed ½ teaspoon sea salt ½ teaspoon freshly ground black pepper
Recipe Instructions:Move oven rack to center of oven. Preheat oven to 425° F. Place all vegetables, garlic, and chickpeas in a large shallow roasting pan. In a small bowl combine oil, rosemary, salt and pepper. Drizzle over vegetables, toss well to coat. Roast, uncovered, about 45 minutes or until vegetables are lightly browned and tender, stirring twice. Makes 8 servings.Herb Roasted ChickenFlavorful, moist herb roasted chicken is great for holiday entertaining. This chicken recipe is heart-healthy with lots of protein, yet low in fat and cholesterol.Recipe Ingredients:1 - 3 lb. whole free-range or organic chicken, giblets removedsalt and black pepper to taste 1 teaspoon cumin 1 tablespoon garlic 1 tablespoon oregano 1 tablespoon thyme 1 tablespoon onion powder, or to taste ¼ cup butter 2 stalks of celery, leaves removed Recipe Instructions:Preheat oven to 350° F. Place chicken in a roasting pan, and season generously inside and out with black pepper and salt. Sprinkle inside and out with onion powder, cumin, garlic, oregano, thyme and onion powder. Place 3 tablespoons butter in the chicken cavity. Arrange dollops of the remaining butter around the chicken's exterior. Cut the celery into approximately 1" pieces, and place in the chicken cavity. Bake uncovered for 1 hour and 15 minutes in preheated oven, to a minimum internal temperature of 180° F. Remove from heat, and baste with melted butter and drippings.
