Welcome to Heart Healthy Recipes' NewsletterRaspberries are the featured heart-healthy food for this month’s newsletter and are usually in peak season in July and August. Also, featured are the health benefits provided, along with two recipes to help incorporate into a heart-healthy diet. Health Benefits of RaspberriesThe antioxidant-rich raspberry is low in calories and high in fiber, along with nutritious vitamins and minerals. These all provide many health benefits.Being low in calories and high in fiber may help with weight-loss or maintaining a desired weight. This will help benefit the heart by having less strain on the heart. Raspberries also help the heart by potentially lowering blood pressure, along with cholesterol, and help prevent plaque buildup. While all raspberries have these powerful health benefits, black raspberries, in particular, are beneficial. Black raspberries may be considered the healthiest with very high levels of antioxidants - giving them the dark purple color. The high levels of antioxidants in the black raspberries may help relieve cell damage, oxidative stress, and free radicals. Raspberry SorbetNaturally sweetened sorbet made with only three, heart-healthy ingredients of raspberries, honey, and lemon.Recipe Ingredients:4 cups fresh raspberries¼ cup honey 2 tablespoons lemon juice Recipe Instructions:Blend raspberries in a food processor with honey and lemon juice until smooth. Place in freezer for approximately four hours until firm.Makes 4 servings. Overnight Raspberry TreatsRaspberries combine with chia seeds and heart-healthy dark chocolate.Recipe Ingredients:2 cups fresh raspberries½ cup chia seeds ¼ cup extra virgin olive oil (EVOO) ½ cup or 4 oz. dark chocolate Recipe Instructions:Rinse raspberries with water. Gently dry with towel.In a medium bowl, stir raspberries, adding the chia seeds and oil. Place dollops, approximately one tablespoon full, of raspberry mixture on cookie sheet that is lined with waxed parchment paper. Place in refrigerator overnight for chia seeds to expand. Next day, melt chocolate in double boiler on stove top. Take raspberry mixture out of refrigerator and drizzle or dip in melted chocolate. Place back in refrigerator for 10-15 minutes to allow chocolate to harden.
Raspberry Storage Ideas:Raspberries may be stored in a variety of methods including simple freezing, dehydrating, freeze-drying, vacuum sealing and/or made into a powder form.Freezing:1. Inspect raspberries, removing debris, including leaves, molding areas, and/or unripe pieces.2. Rinse and soak fresh raspberries thoroughly. Gently drain and lay out on towels to dry. 3. Arrange raspberries in single layers on cookie sheets lined with parchment paper or wax paper. 4. Place in freezer for two to four hours. 5. Remove individual raspberries from freezer and place in airtight containers. 6. Once in airtight, date-labeled, lidded container place back in freezer. 7. Store no longer than 8–12 months in freezer.
Dehydrating:1. Inspect raspberries, removing debris, including leaves, molding areas, and/or unripe pieces.2. Rinse and soak fresh raspberries thoroughly. Gently drain and lay out on towels to dry. 2. Place raspberries on racks in a dehydrator. Dehydrate between 125°F and 135°F. Allow the raspberries to dry for approximately 24-36 hours or until completely dry. 3. Stored in an airtight, date-labeled, lidded container. Raspberries may be stored for up to one year in this manner. Also, may vacuum seal for long-term storage.
Dried and Powdered Raspberries:1. Place dried or dehydrated raspberries in a blender or coffee grinder.2. Pulse until powdered. 3. Next, strain through a fine mesh strainer to remove seeds. 4. Store in an airtight container. Powdered raspberries should last for at least one year if stored properly.
