Welcome to Heart Healthy Recipes' Newsletter! Celebrating Easter and spring with a fresh, sweet basil pesto, along with a vinaigrette salad dressing, and shrimp cooked in avocado oil. Sweet Basil PestoBasil pesto filled with heart-healthy ingredients of garlic, greens, and tasty pine nuts help make up this versatile Italian sauce. Try on pasta, bread, or as a veggie dip.Recipe Ingredients:½ cup olive oil2 garlic cloves ¼ lb. sweet basil leaves ½ cup pine nuts ½ cup Parmesan sea salt, to taste (optional) Recipe Instructions:In a blender add olive oil, garlic cloves, basil leaves, and pine nuts. Blend ingredients until smooth. Gently stir in Parmesan.Makes 6-8 servings. Vinaigrette Salad DressingSalad dressing made with heart-healthy herbs, olive oil, mustard, ginger, and more!Recipe Ingredients:1 cup olive oil⅓ cup balsamic vinegar ½ teaspoon mustard 1-2 teaspoons ginger 2-3 garlic cloves, finely minced 1 tablespoon sweet basil, finely chopped (optional) 1 tablespoon parsley, finely chopped (optional) 1-2 teaspoons thyme, finely chopped (optional) 1 teaspoon lemon juice, fresh squeezed (optional) black pepper, to taste Recipe Instructions:In a two cup mason jar or similar (with lid), add oil, vinegar, mustard, and ginger. Close lid and shake vigorously to blend the ingredients. Removing lid, add remaining ingredients and shake mason jar again. Ready to add to favorite salads.Makes 6-8 Servings. Healthier Baked ShrimpTasty shrimp prepared with heart-healthy avocado oil instead of butter, along with fresh lemon juice, parsley, and more.Recipe Ingredients:1½ lbs. large shrimp¼ cup avocado oil 2-3 garlic cloves, minced 2 tablespoons fresh lemon juice ½ teaspoon red pepper flakes, or to taste 2 tablespoons fresh parsley, minced sea salt (optional) black pepper Recipe Instructions:Preheat oven to 350°F. Place shrimp in baking dish. In a small bowl, add avocado oil, along with garlic, lemon juice, red pepper flakes, and parsley. Next, pour oil mixture over shrimp in baking dish, seasoning with sea salt, and black pepper.Makes 4 Servings.
