Welcome to Heart Healthy Recipes' Newsletter! This month’s heart-healthy newsletter features low-sugar St. Patrick’s Day treats, including mint chocolate cupcakes, a mint chocolate smoothie recipe, along with a pistachio pudding recipe. Mint Chocolate Cup CakesGluten-free cupcakes made with all-natural ingredients. These healthy cupcakes contain zero refined sugars and are flavored with heart-healthy oil and dark chocolate.Recipe Ingredients:2 cups spelt, amaranth, almond or similar gluten-free flour¾ cup unsweetened cocoa powder 1 teaspoon baking soda 1 teaspoon sea salt ¾ cup honey 1 cup dark chocolate, chopped into chips ½ cup plain or Greek yogurt 1½ cup water ¼ cup grape seed oil 2 teaspoons vanilla extract ½ teaspoon peppermint extract Recipe Instructions:Preheat oven to 350°F. In a large mixing bowl, combine the gluten-free flour, cocoa, baking soda, sea salt, honey, chocolate chips, and mix.In a separate mixing bowl, combine yogurt, water, grape seed oil, vanilla and peppermint. Pour the wet ingredients into the dry and stir. Divide the mixture evenly into 12-count lined muffin or cupcake pan, filling approximately two-thirds full. Bake 25 minutes or until mixture has risen and a toothpick in the center of the cakes comes out clean. Refrigerate 30 minutes before frosting. Best if frosted right before serving. Mint Chocolate FrostingAll-natural, vegan frosting made without shortening or refined sugars.Recipe Ingredients:1 can (13.5oz) full-fat coconut milk, canned⅛ teaspoon vanilla extract ¼ teaspoon peppermint extract 1 - 2 tablespoons honey dark chocolate chips, for garnishing, if desired Recipe Instructions:In a small bowl, add the coconut milk, cover, and place in refrigerator overnight to thicken. Once thickened, transfer only the thick, cream portion to a medium bowl, along with vanilla, peppermint, and honey.Next, with a mixer, mix until stiff peaks form.
Use immediately or, if needed, store frosting in refrigerator until ready to use.
Mint Chocolate Chip SmoothieRefreshing, heart-healthy smoothie made with avocados, dates, peppermint, and more.Recipe Ingredients:1 ripe avocado, peeled and pitted½ cup coconut milk, full fat ½ cup plain or Greek yogurt 7-8 Medjool dates 4 cups spinach 1 teaspoon vanilla extract ½ teaspoon peppermint extract 2 tablespoons dark chocolate, chopped 5-7 ice cubes water as needed fresh mint sprigs, for garnish (optional) Recipe Instructions:In a high-speed blender add all the ingredients and blend until smooth. Pour into glasses or jars. Add fresh mint sprigs as garnish, if desired.Makes 2 servings. Pistachio PuddingHealthy pudding made with all natural ingredients including avocados, spinach, and more. Great treat for St. Patrick’s Day or any occasion.Recipe Ingredients:1 ripe avocado, peeled and pitted4 cups spinach ½ cup pistachios, soaked overnight ¼ cup maple syrup ½ cup water 1 teaspoon vanilla extract ½ teaspoon almond extract 1 teaspoon lemon juice sea salt, to taste Recipe Instructions:Add all the ingredients into a blender and blend on high until smooth.Transfer the pudding mixture into serving glasses or jars, cover and place in refrigerator for approximately an hour to chill. Garnish with extra pistachios, if desired, and serve.
